Today, I want to share the recipe for one of my all-time favorite Lebanese dishes: Saj Flatbread. This delicious flatbread is crispy on the outside and chewy on the inside, making it the perfect base for a variety of toppings.

Ingredients:

  • 2 cups flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/4 cup cornmeal
  • 1/4 cup olive oil
  • 1/2 cup water

To make the Saj Flatbread, start by mixing together the flour, salt, sugar, and cornmeal in a large bowl. Add the olive oil and water, stirring until the dough comes together.

Next, turn the dough out onto a floured surface and knead for 5-10 minutes, until the dough is smooth and elastic. Divide the dough into 8 equal pieces and cover with a damp cloth.

Tools:

  • Saj griddle or large cast iron skillet
  • Rolling pin

Using a rolling pin, roll out each piece of dough into a thin circle, about 8-10 inches in diameter. Heat up your Saj griddle or large cast iron skillet over medium-high heat.

Carefully lay the flatbread on the Saj griddle or skillet and cook for about 2-3 minutes per side, or until golden brown and crispy. Repeat with the remaining dough.

Toppings:

Once your Saj Flatbread is cooked, you can top it with virtually anything you like! Here are a few of my favorite toppings:

  • Hummus and roasted vegetables
  • Tomatoes, cucumber, and feta cheese
  • Grilled chicken and tzatziki sauce

Tips:

  • Make sure your dough is well-kneaded so that the flatbread doesn't tear when you're rolling it out.
  • Don't roll the flatbread too thin, or it will be difficult to handle and may tear.
  • Use a Saj griddle if possible, as it will give you the most authentic Lebanese flavor.
