Imagine walking into a dusty outdoor market in the Middle East, the aroma of spices and freshly baked bread filling your nostrils. One item you might find is khubz, a traditional Iraqi bread that has been enjoyed for centuries. Today, we'll show you how to make this delicious bread right in your own kitchen.
Ingredients
- 4 cups of all-purpose flour
- 1 packet of active dry yeast
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 and 1/4 cups of warm water
- 1 tablespoon of olive oil

How to Make
1. Begin by mixing together the flour, salt, sugar, and yeast in a large mixing bowl. Make sure everything is evenly combined.
2. Add in the warm water and olive oil to the dry ingredients. Use your hands or a wooden spoon to mix everything together until a dough forms.
3. Knead the dough on a lightly floured surface for about 10 minutes. The dough should feel smooth and not sticky.
4. Place the dough in a clean, oiled mixing bowl and cover with plastic wrap. Allow the dough to rise for about an hour, or until it has doubled in size.
5. Preheat your oven to 450°F (230°C) and place a baking sheet inside to heat up.
6. When the dough has risen, punch it down and divide it into 8 equal parts. Roll each part into a flat circle about 1/4 inch thick.
7. Take the hot baking sheet out of the oven and place one or two circles of dough onto it (depending on the size of your baking sheet). Brush the tops with water.
8. Broil the dough for 1-2 minutes, or until the tops are golden brown and the bread has puffed up. Take the bread out of the oven and brush with olive oil. Repeat the process until all of the bread has been cooked.
Tips
- If you prefer a softer bread, wrap the cooked bread in a damp paper towel while it cools.

- Store leftover khubz in an airtight container or bread bag for up to 4 days. To reheat, wrap the bread in foil and place in the oven at 350°F (175°C) for about 10 minutes.
Note
- If you don't have access to a broil setting on your oven, you can also cook the bread on a hot skillet or griddle. Simply heat up your skillet or griddle over medium-high heat and cook the bread for about 1-2 minutes on each side, or until it has puffed up and is golden brown.
