Chicken and Broccoli Stir Fry

Chicken and Broccoli Stir Fry

Ingredients:

  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons olive oil
  • 4 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon black pepper

Instructions:

  1. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil and swirl to coat.
  2. Add chicken and cook until browned and cooked through, about 4-5 minutes. Remove from skillet and set aside.
  3. Add the remaining tablespoon of olive oil to the skillet. Add the broccoli and onion and cook until the vegetables are tender, about 5-7 minutes.
  4. Add garlic and cook for an additional 30 seconds.
  5. In a small bowl, whisk together soy sauce, brown sugar, cornstarch, red pepper flakes (if using), and black pepper.
  6. Add the sauce to the skillet and stir to coat the vegetables. Cook for an additional 2-3 minutes, or until the sauce has thickened.
  7. Return the chicken to the skillet and toss to combine everything. Serve hot over rice, noodles, or quinoa. Enjoy!

Trust me, this dish is seriously delicious. It's like taking a trip to your favorite Chinese restaurant, but without leaving the comfort of your own home. And who knows? Maybe your little one will end up being a foodie just like baby Alex!
