Today I'm going to share with you one of my favorite Italian Christmas cookies recipes - perfect for adding some festive cheer to your holiday baking. These cookies are known as Cuccidati and are an absolute must-try for any cookie lover out there. I got the recipe from a friend of mine and I'm excited to have the opportunity to share it with all of you.
Italian Christmas Cookies (Cuccidati)
To make these cookies, you'll need the following ingredients:
- 3 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup chopped dates
- 1/2 cup chopped figs
- 1/2 cup raisins
- 1/2 cup chopped almonds
- 1/2 cup chopped walnuts
- 1/4 cup honey
- 1/2 cup apricot jam
Directions:
1. Preheat your oven to 350 degrees F (175 degrees C). 2. In a large mixing bowl, mix together flour, sugar, baking soda, and salt. 3. Add in the butter, eggs, vanilla extract, and milk. Mix until well combined. 4. Stir in the chopped dates, figs, raisins, almonds, and walnuts. 5. In a small saucepan, heat the honey and apricot jam together until melted and well combined. 6. Divide the dough into four equal parts. 7. Roll out each part into a rectangle shape, about 1/8 inch thick. 8. Spoon some of the honey and apricot mixture on top of each rectangle, spreading it evenly across the surface. 9. Roll up each rectangle as tightly as possible and cut into slices about 1 inch thick. 10. Place the slices onto a baking sheet lined with parchment paper. 11. Bake for 20 minutes or until lightly golden brown. 12. Allow the cookies to cool before serving.
